I was really excited about this book, especially after reading such great reviews. I have made a number of recipes, and most of them have been so bland- we've had to add a lot of spices just to make them have any flavor. Some have been good- but I am disappointed.

This is a cookbook that I ended up purchasing because my mother already had a copy and made some very good dishes from it.So, I had to get a copy and I wasn't disappointed!

Unless you are someone who has to have meat with every meal or hates vegetables, you will enjoy this cookbook.I really don't think it's for vegetarians only.Many of the recipes would compliment a main dish meat very well and others make fabulous meatless-entrees.I have made the "Baked Ziti" and it bakes up deliciously with a crust of cheese on top!I've also tried the "Eggplant Sauteed with Tomatoes, Capers and Garlic" and it was wonderful!So far I haven't made a recipe that disappointed.

The book contains over 500 pages of recipes from a variety of cuisines (Italian, French, Chinese, Indian, etc).There are no photos, but that didn't really bother me.I purchased it because I wanted to eat more veggies and cook more healthfully, and the book has served that purpose.Also, the recipes are straight-forward to prepare.Under each recipe title are small symbols that denote which type of "vegetarian" the recipe would be appropriate for (Lacto-Ovo, Lacto, Ovo, Vegan).At the end of most recipes are ideas for variations to provide more options.

Overall, I've been very pleased with this book.(And I think it shows because apparently I've crinkled the pages a bit from using the book in my kitchen!)I would recommend it to both vegetarians and non-vegetarians.

This is probably the best cookbook I've every purchased.Eating vegetarian will never be dull or difficult again.After flipping through the book and trying many of the recipes over the past week I am full of ideas and can't wait to try all the new menu suggestions.Most of the recipes are not only vegetarian but also health conscious on a broader level - cooking methods, fiber, fat content, etc.This might be the only vegetarian cookbook you will ever need.I am not a true vegetarian but only have meat a few times a week so really appreciate all this book has to offer.

I own several vegetarian cookbooks and this one is easily my favorite. Why? I can count on it! I know the recipes will turn out great and will call for natural ingredients that are good for my family. The cookbook is comprehensive, including a multitude of recipes as well as tips for stocking your pantry and for planning your menu. The author includes ethnic recipes such as "Szechuan Broccoli" and "Moroccan Vegetables with Couscous" as well as American comfort foods like "Three Cheese Macaroni and Cheese."

This book is a valuable resource for all types of cooks. It was even recognized as one of the best recipe collections when it was named a Julia Child Cookbook Award winner in 1997. I know I'll continue to use 1,000 Vegetarian Recipes in my kitchen for years to come.

This book requires lot of pre-prepration and ingredients. This book is not for regular use. I did try some of the recipes and they were good, just baked them instead of using slow cooker.

I had been searching for a vegetarian slow cooker recipe book for some time. This book has been excellent! I have tried a number of recipes with much success. I have loved all of them! Some require a little more prep than others. My husband who hates eggplant absolutely loved the Tofu Ratatouille recipe. The only problem I have encountered is that the recipes are not kid friendly (my kids, at least, don't like too many of the ones I have tried so far).

I was hesitant to purchase this book because I'm Vegan and I spend a lot of my time revamping vegetarian cookbooks to fit that lifestyle, having to omit and replace, but this book was fantastic!There are many, many items in the book that are vegan "friendly" and I have to say, they are totally delicious.Last night I made the Sweet Potato and Barley Risotto - outstanding.Needed just a little dab of soy milk (or soy butter) for a creamier texture, but it was fantastic and didn't require any salt for flavor whatsoever.

The only shock for me was the amount the recipe made.The recipe suggests it serves 4.Even as a main dish, if that was a serving, I would be big as a house.It could easily serve 8-10 with 1 cup servings.1 1/2 cups barley really expands when cooked!

I am thrilled I bought this and would recommend it to vegetarians, vegans, and meat-eaters trying to find variety alike!

I love cooking, but with a husband who usually doesn't get home until 7:30 and a toddler who is most demanding of my attention right before dinnertime, getting everybody fed was a struggle.

Enter this book.

I love 125 Best Vegetarian Slow Cooker Recipes because:
- The dozen recipes that I've tried have all been outstanding. A few of them I would go so far as to categorize as gourmet standard.
- There's a great introduction with extensive tips on slow cooking.
- I get to cook in the morning, when the baby gives me the most time to cook.
- Half the dinner dishes are done hours before dinner. (i.e. prep dishes, cutting boards, knives, etc.)
- The recipes that I've tried have been quite economical to prepare, since whole veggies are cheap. This is especially true now that I have a few key spices in my spice cupboard.
- I feel good about getting more veggies into my family's diet. We aren't vegetarian, but we still love these recipes. Sometimes I supplement with grilled sausages, chops, etc.
- My toddler has happily eaten 9/10 of these dishes.
- We're a family of three. Generally I get two meals out of these recipes, or they're great for feeding hungry guests.

This is _not_ the book for you if you're a dump-it-and-go slow cooker. Most recipes involve softening veggies, etc. in a separate sautee pan, which seems to really irritate some folks.

However, if like me, you like to cook, but want to control _when_ you cook, this is a fantastic book. For stay-at-home moms and dads, you'll get dinner prep out of the way in the morning and have time for your kids and spouse at night. For working folks, there are extensive sidebars explaining how to prep most recipes the night before, so you can come home to a hot meal.

FYI, some of our favorite recipes have been Poached Eggs on Spicy Lentils (substituting hardboiled rather than poached eggs); Sophisticated Mushroom Barley Soup; Savory Cheddar Cheese Soup; and Creamy Leek Soup with Stilton. Have fun!

I love my slow cookers!I have three of them and have six slow cooker cook books.This one is definitely my favorite.I was a vegetarian for a long time and now that I am eating meat again I still go back to this book for my slow cooker recipes.The recipes often call for some minor sauteing prior to tossing everything in the slow cooker but this prep is quick and truly enhances the flavor of the dishes.This slow cooker book is not just a "toss in all of the processed foods and call it dinner" slow cooker cook book.This cookbook uses real ingredients for inventive, healthy, inexpensive, and savory dishes.A must-buy for a slow cooker and veggie lover!Delicious meals to come home to on those stressful days...everyone should use this book! ... I use the well used phrase, 'if you can only buy 1 book, make it this one' because it deserves the praise. I use this book often, at least once a week to prepare meals for my family. They are easy to prepare, ingredients are readily available, no extra shopping trip necessary if you include fresh produce in your weekly groceries. Most importantly, the recipes are very economical and the end results are delicious, consistently.

Recipes are satisfying, we never feel like something more substantial is missing. The 'i-tüpfelchen', (the extra cherry on the creme) is the caloric and nutritional information.
A wonderful book for starters if you are just beginning your vegetarian journey. It includes recipes for lacto-ovo vegetarians as well as vegans.

The pictures are appetizing, 1000 recipes from which to choose, you will never get to the end of this book. It is extremely well organized.

Although they are easy to make, the recipes are fancy enough for special occasions.

Since owning this book, all my other vegetarian books have receded into the backwall of the bookshelf. I highly recommend this book and intend to buy more copies for each of my children and special friends.

This book has a lot of promise, and I really want to like it. I'll start with what's good:

The book is organized fabulously. Each recipe is on its own page, with a large color photo, a few step-by-step photos, nutrition information, and a difficulty gage. The recipes are organized into general sections, like Soups, Pasta & Rice, Outdoor Cooking, etc., though there's no table of contents or index. There are a lot of recipes that look and sound delicious, and make you want to jump right in and start cooking.

Once I started cooking out of it, though, my thoughts changed a bit. I'm a beginning cook who doesn't have a lot of extra cash (college student). One major problem with the book that I began to notice right off the bat is that the vast majority of recipes are very "gourmet", whith long ingredient lists and uncommon ingredients. Several of the pasta recipes call for fresh pasta, there's liberal use of fresh herbs and gourmet mushrooms, and a lot of them simply don't seem to be aimed at the quick-and-easy set (which is fine, if that's what you want).

The real clincher for me though was that none of the recipes really turned out that well for me. I skip back and forth between this book and another (Fanny Farmer) for recipe ideas, and even for nearly identical dishes the ones from this book took longer to make and turned out bland and unappetizing. There were several that I didn't have any comparison for that ended up being a disaster.

Of course, I haven't tried all of the recipes here, so there could be some real gems I haven't come across (or that I screwed up in the process). I hope that's the case, because I'm going to keep trying it every so often amongst my other books. But as of right now, I wouldn't recommend this over any other vegetarian cookbook. While it's nice to look at and get inspired by, the time, effort, and taste just hasn't been worth it.

As a hesitant omnivore, I picked up this cookbook on sale after paging through the recipes and seeing many different dishes with few recipes involving tofu or beans.It was literally the wisest purchase I have ever made; it made my transition to vegetarianism a smooth and thrilling one.I could not cook/live without this cookbook.

The pictures are excellent, and the recipes are varied:Indian Hyderabad pickles to stellar Italian pasta dishes.Over the past year, I've tried the appetizers, breads, pasta dishes, salads and met tasty success with all of them.

This cookbook is more of an introduction to than a tutorial in international cooking.Some of the recipes are a bit westernized, and the dishes suffer minor compromise.The desserts are a little too health-conscious for my taste, but the rest of the book makes up for it.Despite these drawbacks, I would recommend this cookbook to anyone--vegetarian or not, beginner to advanced cook.

I'm not vegetarian, but I love veggies, rice and pastas, and this cookbook has plenty to serve.Each page has great color photos (usually 4) showing the different steps to cooking the meal & the final product.Each recipe also has nutritional info as well as ETAs for cooking & prep time.There are also plenty of cooking tips.My favorite recipes are the soups.We esp LOVE rthe exotic mushroom soup.

Just to give you an idea of recipes: orange & pumpkin soup, zucchini & thyme fritters, eggplant timbale, white raddishh curry, walnut & olive pasta, spinich & ricotta gnocchi, bean curd w/bell peppers, cheese & potato strudel, turkish kabobs, coconut apples, special peach melba, cool cucumber salad, saffron-flavored potatoes, mango ice cream, and sweet fruit wontons.hungry yet?

My onlu issue is that the book's binding is week and my book is starting to fall apart.I guess I use it too much.

The title should say it all. I have an hour and a half commute to work and I go to night school - I don't have time to cook. Ever. But these recipes (some are better than others, be forewarned) ensure that I eat something other than frozen vegetables and rice. The bean and grain focused sections feature recipes that are all about the glory of the vegetable and don't require cheese, milk, cream etc. Nor do you necessarily need to rely on pretend meat items or soy for these recipes. I live in a rural part of the US and finding something exotic like "tofu" can be challenging but the essential ingredients in these recipes are fairly easy for me to find.

In short, buy the book if you are busy, have a crock pot, and don't want to eat animal products.

Overall I like the recipes in this book.They taste good, and I like her idea of sauteing the onions and other vegetables on high for a half hour before adding the other ingredients so that you can avoid "cooking" and dirtying a skillet.However, she wants too many things precooked.The sauteing is alright, but her bean recipes are too complicated.Soaking beans overnight is normal, but then she wants the beans to be slow cooked for 8 hours prior to using them in the recipe!I personally find this suggestion overkill since this means by the time the recipe is done the beans may cook for 16 hours.

I've been vegan for 6 years now & vegetarian for well over 10. I LOVE cooking and baking, and am always looking for new cookbooks to add to my collection. However, the problem is that once I have my hands on a new cookbook, I skim over the recipes & then hardly ever touch it again! That might just be my style... I let the recipes inspire my cooking, but rarely follow the directions to the letter.

Anyways, last year I purchased a crock pot to attempt try slow-cooking. After several unsuccessful tries I gave up. I just assumed that I could throw ingredients into the pot, wait 7 hours, and then *poof*, a yummy dinner would magically appear. Sadly that is NOT the case. So, I began shopping around for a good vegetarian/vegan slow-cooker book.

Well, let me say that after ordering this cookbook (Fresh from the Vegetarian Slow Cooker), I've gone from using my slow-cooker once every 3-4 months to 3-4 times per week! All of the recipes I've tried are AMAZING! And, unlike some other reviewers, I've found the cooking times to be right on. (I have a 5-quart crock pot by Rival. If you order this book, I would recommend cooking with either a 5 or 6 quart crockpot, nothing smaller)

There is a wonderful array of ethnic-inspired dishes included in this collection, (middle-eastern, italian, indian, etc) as well as dishes using meat substitutes, (seitan, tofu, tempeh) and legumes-a-plenty (the split pea & parsnip soup is killer!!!)

Not to mention that the book includes everything from appetizers, entrees and soups to desserts and hot drinks! And the majority of it is nearly 100% vegan, and vegan substitutes are readily discussed throughout the book. Can it get any better than this? I think not!

Finally, its such a wonderful feeling to know that when I get home from a long day of work & roller derby, a yummy, healthy, home-cooked and hot meal awaits me!

It should be noted, however, that many of the recipes require around 10-15 minutes of prep work either at the very beginning (sauteeing onions, for example) or at the end of the cooking process (cooking & adding couscous to a dish). Additionally, many of the bean dishes require soaking the beans overnight. But, if you don't mind the time spent, its WELL worth it! In other words, would I sacrifice 15 minutes of my morning so that I could enjoy a slow-cooked soup in the evening? YES, without a doubt!

By far, this is the most used cookbook in my collection, and, unlike my other cookbooks that sit on my shelf looking pretty, I actually enjoy following the recipes because I know that the finished product will be totally delicious!

Highly, highly recommended book for all you vegan/vegetarian crock-pot lovers!!! Very recommended for all of you vegans on the go!!! And especially recommended for all of you veggies out there who - like me - have been resistant to cooking with recipes and/or cookbooks. This book will help you develop a true appreciation for cooking with recipes, while inspiring you to create your own vegan slow-cooked delights on your own! Its the best of both worlds!

My copy of this book is well-worn and filled with post-it page markers.We have not yet been disappointed by a recipe, and we've tried many of them.Ingredients tend to be relatively simple to find, and there are instructions for both dried and canned beans for recipes that use them.You'll need a well-stocked spice rack, but the results are quite rewarding--each dish is full of flavor and absolutely delicious.While some express concern about the use of soy products in some of the recipes, these can be left out or replaced; for example, the tempeh in the (heavenly) Hungarian Goulash recipe can be replaced with chunks of winter squash.Even so, there are plenty of recipes that do not call for soy or tempeh.I myself am allergic to a couple of items, but when I encounter a recipe calling for those items, I either substitute or omit them--I don't expect them to never be included in recipes just because I can't eat them, as I know that other people enjoy them!One tip I will leave you with:The recipes call for vegetable stock a lot; I use Organic "Better than Bouillion" for these, as it makes things very simple. ... This book has a few good recipes.It's worth buying if you are vegetarian.

The recipes are delicious and nutritious, but require way more than one dish to prepare.In fact, I had a whole load of dishes on my hands after making Spinach-Lentil Pasta.It was worth it, but I thought this book would have simpler recipes.Also, the writer openly admits to not being a vegetarian herself, so if you want basic, staple recipes for a vegetarian diet, get a different book. However, it is a nice addition to a veggie library.

I bought this book based on the good reviews, but unfortunately I did not see any recipes that I found all that appealing, and many of them called for ingredients that would be hard for me to find.To be fair, I live in a pretty rural area where lots of things are hard to find without having to drive 50 miles.I returned the book.

I love this book!I have had it for many years and I have had my meat eating friends and family ask me for some of the recipes.No weird, exotic ingredients, everything can be found at your neighborhood grocery store.This is a great addition to your cookbook library...even if you are not a vegetarian.

I really like the recipes in this book, because vegetarian meals don't need to be entree-side dish in format.You can use good fresh ingredients to make great meals, and this is an excellent resource.But I want to warn those who may be new to vegetarianism that the recipes are not stricly vegetarian.At least one uses fish sauce, and another uses worcestershire sauce, neither of which is vegetarian (worcestershire sauce has anchovies, which are fish).If you're a pesco-vegetarian (can eat seafood), or if you just want meatless meals, you're fine; if you are actually vegetarian, watch the ingredients carefully and make substitutions as appropriate.The author herself is not vegetarian and probably does not realize that these ingredients make a meal non-vegetarian for most of us. ... I've been a vegetarian for over 10 years, but my husband is not.This book is great even for the non-vegetarian.There are great pictures, easy instructions, and very unique recipes I haven't seen anywhere else.There aren't just pictures of the end result, but there are pictures of the process also (which is where I often get confused while cooking), so you can be an inexperienced chef, but still create gourmet meals.

You make pretty much everything from scratch, which is so healthy and it's also a lot of fun.If you buy one recipe book, this should be it.

This book gets more use than any other cookbook in our extensive collection, and we aren't even vegetarians, we just wanted to eat healthier.As a matter of fact, I'm making the Leek Souffle tonight, and I used the hummus recipe for a party.

The photographs make the food look so good that you're eager to try out the recipes, which are all fairly easy to make.The ingredients are fairly simple and easy to find at the grocery store.

So many of these recipes have become regulars on our menus.The baked eggs with leeks are a great lunch or breakfast, and I've made it so often, I don't even need to look at the book anymore.The vegetable pilau is a favorite, too.We've even used tabs on this book so we can hit our favorites easily (we have about 12 tabs in the book so far).

If you buy no other cookbook, buy this one. I can't believe how impressed we are with this book!!!

I have just recently become a vegetarian and this cookbook was bought for me as a gift.The recipes are very clear with plenty of pictures and handy tips.I now know how to sundry my own tomatoes and who knew you could substitute natural peanut butter for sesame tahini when making hummus.The Fried Noodles with bean sprouts and asparagus is one of my favorites.For a new vegetarian, like myself, I needed a cookbook that was not intimedating or that didn't include exotic ingredients.This is a perfect collection of delicious recipes.

This is my favorite vegetarian cookbook, and I have several. There is a photo of each finished recipe, the instructions are precise and clear, the recipes are mostly easy and the ingredient lists are simple and accessible at any major food market. None of those specialty ingredients that you find in other books.

Also, many recipes use shortcuts like canned and frozen ingredients, which makes it possible to keep them on hand and reduces prep time. With the addition of a few fresh ingredients, you can be ready to go. Each recipe has a helpful tip, shortcut or serving suggestion, which comes in handy.

I bought this book online on a whim.So far, I have made 4 things and they all have been super easy and very tasty.I like these meals because they are very hearty - unlike some vegetarian meals.The author also uses a lot of "one-pot" meals where you just make one dish and it is filling enough to be the whole meal (I prefer this to having to prepare a main dish and a side dish and a salad, etc.) I thought the ingredients were easy to find and the health information seems well-researched.I have found that the preparation times in the book (generally 10-20 minutes) are very accurate.The dishes also seem very kid-friendly both in cooking and taste.I have already thought about sharing this cookbook with my mom!

This is just a good, basic vegetarian cookbook with lots of variety. One may not use every recipe in it, but I rarely use every recipe in any cookbook, so I don't think that is unusual. And, it IS 1001 recipes to work with. A nice addition to vegetarian cooking, and really nice to have. It is not a how to be vegetarian book, I would recommend Becoming Vegetarian for that, or The Vegetarian Way.

3-0 out of 5 stars This book is the bargain basement of vegetarian recipes:
Having gone veggie a few years ago, this was my first non-introductory style vegetarian cookbook, and although I commend Spitler and company for the sheer quantity of recipes here, I've found the recipes to be very hit or miss. I think this is partly due to the often non-intuitive combinations of ingredients found in many of the recipes. While sometimes these out-of-place ingredients are genius (i.e. the black -not adzuki- beans in the egg rolls, or the more than liberal use of celery seed in the bleu cheese dressing), sometimes these combinations can turn what seemed like a tasty dinner into something even my dog looks askance at (like the orange juice and zest in the hummus or the cream cheese and cranberries in the savory wontons). The dishes err more on the sweet side of the palate than on the spicy side. That said, all of the dessert type foods I have tried so far have been solidly good, while the majority of the entrees required a healthy dose of crushed red pepper. My suspicion is that these recipes were generated by a crew less than adequately familiar with vegetarianism, as many of the recipes attempt to make use of meat substitutes (i.e. Mexi "meatball" soup, rigatoni with italian "sausage" and fennel pesto, "burgers" provencal, swedish "meatball" and dilled potato cassarole, etc, etc)with less than appetizing results. There are a least two problems here: first, there are plenty of amazing veggie dishes that don't try to imitate the "meat and potato" style meal (there are almost NO Indian entrees in this book), and second, nothing makes one miss the real thing more than a poor substitute. Yes, those tvp crumbles look innocent enough in the grocery aisle and are easy enough to throw into the pasta sauce, but unless you want to spend you're evening sobbing over your half eaten plate of "sausage" lasagna for your momma's home cooking, then PLEASE skip the phoneys and throw in some chopped baby bellas instead. To summarize, this book is like the bargain basement of vegetarian recipes: over-stuffed with so-so items, but amidst the bland and the out-and-out bad, there are a few gems that make this book deserving of a place on your shelf.

As a bonus for those tracking diet information: each recipe is tagged as vegan, lacto-ovo, lacto, or ovo, to make finding appropriate recipes easy, and all recipes come with calorie counts, basic nutrition information, and the exchange listings for the ADA.

It's an excellent starting point for anyone considering going Vegetarian especially singles and college students. The recipes are relativaly simple and the meals are perfect for a single student living off just barely over minimum wage. They aren't too big so they don't leave many left overs which can be an issue if there is a lack of space. It's not easy sharing a refridgerator in a house of five people. The lack of variety is my only problem. It's got a few great recipes but not nearly enough for someone who really needs more variety in their diet.

My husband and I are just starting our new vegan diet after reading many books about how bad animal products, all fat and dairy are for your health.
This book is very helpful, with easy to follow recipes and lots of useful information. I have made the bean dip, tofu mayo, seitan roast and many others. I found them all simple to make and very good. I will be using this cookbook a lot as I continue to learn this new way of cooking.Although we have had to buy lots of new items we have saved much more by eliminating meat, fats and diary. It is even easier now to find places to eat that serve vegan. I haven't made any of the many dessert recipes but they all look really good.

Great whole foods recipes, delicious and easy to make! There is no reason to settle for the Standard American Diet (SAD) of bland colorless wads of meat made palatable (and addictive) through the addition of fat, salt, sauces, and spices, when you can have beautiful delicious variety that builds up your immune fortress against disease.

When someone says TOFU I say YUCK! No Way! But I will tell you that this cookbook is excellent! Tofu and all! Everything I have made tastes great. I made a full mexican stlye meal for my family and extended family (all will NOT eat tofu) and they all loved it. They took the left-overs home. I never did tell them that I used tofu or that is was vegitarian. I used tofu, that soybean meatless meat stuff and nobody knew. (I made Spanish Rice, Border Beans and Fajitas.) I also purchase the 20 Minutes to Dinner Cook Book by the same author and it is good also. The Chinese Noodles are to die for. The pasta salad is excellent.I still cannot believe I am eating tofu and liking it. Great source of protein if your not a meat eater. It has no taste-it takes on what-ever flavor you are cooking it with. You don't even notice the texture. You don't notice it at all. Who would have thought.My Mom who is against anything healthy keeps coming over to see what I am making for dinner. I just don't tell her it is tofu or healthy and she eats it. Someday if she finds out she will kill me! She is anti whole wheat, aniti vitamin, anti tofu. She loves meat, smokes and sits on the couch waiting for a heart-attack. Great Book!

Q. What motivated you to write a comprehensive cookbook of vegetarian recipes right now?

A: What motivated me--several years ago--was seeing the handwriting on the wall: That although being a principled, all-or-nothing vegetarian was not a course of action that would ever likely inspire the majority of Americans, the days of all-meat-all-the-time (or, to be slightly less extreme, of a diet heavily dependent on meat) could not go on. Averaging a consumption of two pounds a week or more of meat (as Americans do) is not sustainable, either for the earth or our planet. And, as more and more of us realize this, I thought it was important to develop a cookbook along the lines of How to Cook Everything, but without meat, fish, or poultry. Needless to say, there's plenty of material.

Q: In the course of writing How to Cook Everything Vegetariandid your approach to food shopping, cooking or dining change significantly?

A: Completely. The more I tried new ways of cooking with vegetables, whole grains, and legumes, the more I enjoyed them. I probably eat sixty or seventy percent fewer animal products than I did three years ago.

A: No. There are hundreds I wish I could cook all the time, but one can only cook and eat so much. But in the last week, for example, I've made Fava Bean and Mint Salad with Asparagus; Lemon-Ricotta Pancakes; Cornbread Salad; and Red Lentils with Chaat Masala.

Q: Why is simplicity so important in cooking?What does the novice home cook need to know to cook and eat well?

A: Simplicity is only important because it's the way to learn to cook; it's very difficult to start cooking with complex dishes. For people to learn to cook, they must start simply--the way everyone used to cook. And, for most of us--including me--there's no reason to carry things much further. Even the simplest cooking is rewarding, enjoyable, and--obviously--the healthiest and best way to eat.

Crunchy Corn Guacamole
Here's a new twist on the traditional guacamole (which you can find in the form of the first variation). The fresh corn kernels add texture and flavor without taking away from that of the avocado.

Serves 4
Time: 15 minutes
Ingredients
--1 lime
--1 cup corn kernels, preferably just stripped from the cobs, but thawed frozen is acceptable
--1/2teaspoon minced garlic
--1/2cup chopped scallion
--1 serrano or jalapeño chile, stemmed, seeded, and minced (optional)
--2 tablespoons chopped fresh cilantro leaves
--1/4 cup roughly chopped toasted pumpkin seeds
--3 medium ripe avocados, preferably Hass--salt

1. Grate the lime zest (or use a zester to make long strands) and reserve; cut the lime into wedges. Put the lime zest, corn, and garlic in a food processor; squeeze in half of the lime wedges and pulse to make a chunky purée.
2.Put the corn mixture along with the scallion, chile, and a large pinch of salt into a medium bowl and mash until the mixture is well combined. Add the cilantro and pumpkin seeds and mash a few more times.
3. Cut the avocados in half and reserve the pits if you will not be serving the guacamole right away. Scoop the flesh into the bowl and mash, leaving a few chunks of avocado. Squeeze in lime juice from the reserved lime wedges to taste.
4. Season with salt to taste and serve or tuck the pits back into the mixture and cover the surface with plastic wrap (this will help keep the guacamole from turning brown), then refrigerate for up to 4 hours. Remove the pits before serving.

Minimalist Guacamole More traditional: Omit the corn kernels and pumpkin seeds. Add the zest and garlic to the scallion in Step 2 and proceed with the recipe.

Guacamole with Tomatillos. The tomatillos add a nice hit of acidity: Substitute 1/2 cup chopped tomatillo for the corn and pumpkins seeds if you like. Skip Step 1 and add the tomatillos to Step 2.

Avocado and Goat Cheese Spread or Dip. Spread this on bread and layer with grilled vegetables for a fantastic sandwich: Omit the garlic, chile, cilantro, and pumpkin seeds. Substitute lemon for the lime and 3/4 cup goat cheese for the corn. Put everything in a food processor if you want a smooth spread; for a chunkier spread, just use a potato masher or fork.

Pea Spread or Dip. Great on Crostini: Instead of the corn and the avocados, use 1 pound lightly steamed fresh or frozen peas. Omit the chile and pumpkin seeds. Use lemon instead of lime and process all the peas as you would the corn in Step 1. Substitute fresh mint leaves for the cilantro. If you like, thin the consistency a bit by adding a little cream, yogurt, or silken tofu.

Asparagus Spread or Dip. A great low-calorie alternative to traditional guacamole: Follow the variation for Pea Spread or Dip, but use 1 pound lightly steamed asparagus instead of the peas. Pat it dry, slice it into manageable pieces, and proceed with the recipe.

...and perhaps the best cookbook i own!i received this book as a christmas gift and haven't stopped reading it since.i own TONS of vegetarian cookbooks and this is by far the most user friendly.you do find some of the "harder to find" ingredients that sneak their way into every vegetarian cook book, but for the most part, these are simple recipes with simple components that i usually buy every week anyway or always have in my pantry.i am always searching for new ways that are simple and quick to use the same old vegetables.and there are PLENTY in this book, with its variations on most every recipe that involve only changing one ingredient or adding a different fresh herb, etc.it has even inspired me, a complete non-baker, to start baking bread WEEKLY!the recipes are just so easy and there are great illustrations too.it has totally de-mystified things for me and i would recommend it to ANYONE, vegetarian or not.my mother swears by the original "how to cook everything", so in my opinion, mark bittman has just hit the nail on the head!

This is an interesting cookbook.Mark Bittman, who has created other cookbooks, takes a shot at a vegetarian cookbook.One nice wrinkle--he shows Vegans how they can adapt some of these recipes to their needs.He begins by noting that (Page ix) "Increasingly, Americans are becoming `flexitarians,' a recently invented word that describes both vegetarians who aren't that strict and meat-eaters who are striving for a more health conscious, planet friendly diet." He follows up by noting, simply, that (Page x): "A diet that is high in vegetables, fruits, whole grains, and legumes is a healthier diet than one that isn't."

Some nice features aside from the recipes: a section on key ingredients that one needs in the kitchen, required equipment for cooking, various kitchen techniques (how to sharpen knives, different ways of "cutting" with knives, measuring, different methods of cooking (e.g., steaming, sautéing, braising, etc.).Then, on to recipes.

Recipes are grouped in the following categories: salads; soups; eggs, dairy, and cheese; produce (vegetables and fruits); pasta, noodles, and dumplings; grains; legumes; tofu, veggie burgers, and other high-protein food; breads, pizzas, sandwiches, and wraps; sauces, condiments, herbs, and spices; desserts.Obviously, there are too many different categories to go into great detail in each.Following, a set of recopies that look interesting (and doable) to me.I hope to try some of these out in the near future (confession: I am not a vegetarian, but I am a "flexitarian").

Salads: Carrot salad with cumin. Nice look to it--carrots, orange juice, lemon juice, olive oil, pepper, and--most interesting to me--cumin.Pretty simple to make and it looks tasty.Soup: I recently made potato and leek soup using another cookbook.This one has a somewhat different recipe that looks worth trying out. One nice aspect of this cookbook well exemplified by this dish: Bittman provides alternatives variations.In this case, that includes how to make this into Vichyssoise, Vegan Vichyssoise, and Korean style potato and leek soup.

Produce: Roasted or grilled asparagus.Very simple recipe, but I love asparagus, so any recipes are welcome at my home!Asparagus, olive oil (extra virgin), salt, and lemon wedges.What could be easier?Broccoli Roman style: Unlike George H. W. Bush, I love broccoli! Whether raw or cooked or done any other way!Pasta: Pasta with broccoli (my bias shows again, regarding broccoli).Legumes: Vegetarian chili con carne (depending for its power on hot chili).Burger: Spicy autumn vegetable burger.Key ingredients: Kale, cannellini, extra virgin olive oil, sweet potato, bread crumbs, cinnamon, nutmeg, pinch of cayenne).Sounds yummy to me!

So, bottom line, a nice cookbook.The recipes tend to be pretty straightforward.If interested in more vegetarian eating, this would be one nice volume to explore.

My wife is the cook, not me, but after I heard Mr. Bittman discussing this book and his philosophy on NPR, I went out on a limb and bought this for her.I have to say her initial reaction was less than enthusiastic.The sheer size of the thing is intimidating.But over the next few days she started looking thru it, and started flagging recipes to try, and bought all the essential ingredients to have on hand that Bittman lists, and she's been cooking from it every day since.The food made from these recipes is good, and even if one isn't quite to your taste, Bittman offers numerous suggestions for variations with each recipe.You are bound to find one to your liking.So if you want to expand your vegetarian cooking horizons, and enjoy cooking while you're doing it, this book will suit you well.

5-0 out of 5 stars A Truly Lovely Addition to your Cookbook Collection with a minor exception.
I love this book. Not just for the recipes but for the clean design and beautiful photographs. Everything about this book makes you want to use it over and over.

I do have one word of caution. Her miso soup recipe calls for you to boil the miso. She makes an effort to explain how beneficial miso is for your health but unfortunately, boiling miso destroys all of the good enzymes.

Add it at the end by turning off the heat, mix in your miso, and wait a few minutes before serving. Heat activates the enzymes but, again, boiling will destroy them.

Aside from this small detail, it is one of my favorites amoung my vast collection of cookbooks.

This book is the perfect soup cook book. I really love soup and wanted some new and interesting recipes. This book definitely delivered!I have tried many of the recipes and all of them were delicious. Each recipe is very unique and my favorite so far is the roasted vegetable soup.The roasting causes a sweetness and carmelization that is delicious and even though there are a lot of ingredients prep is quick because it is mostly just chopping up veggies.

One of my friends was recently diagnosed with Celiac Disease and this book is helping her through her tough time with her new dietary restrictions.She is not able to use any canned broths or bouillions that you could buy at the store so the vegetable stock recipe in this book is helping her to be able to eat the soups she loves again.

This is a great book!

I think a good cookbook should have an image for every recipe.
This cookbook has beautiful images, but I wish they would show me an image of the cooked soup instead of images of the ingredients. I knowwhat a raspberry looks like, but I have no idea about raspberry soup.
Else than that I think that the yummy titled of the recipe make up a little bit for the lack of images, they all sound good. They are simple yet not obvious soups. They have refined ingredients, but not obscure, you can find everything at the grocery store.
My only other critique would be that the organization of the explanation is trying to simplify the flowing of the making process, but I think it is just confusing. I would like a 1-2-3 kind of book, but this one is more like a flowing text wich makes it hard to follow once you are in the kitchen with your stuff cooking fast.
Over all it seems to be a good book, full of nice little recipies. I just wish there was more images... ... Read more

I did enjoy this book and have made some items out of it. My only issue is that it does call for ingredients I had never heard of and had a hard time finding them in the store. I did ask for help, but of course no one in the store knew what I was talking about. Other than that, the food is VERY good in this book, they are easy to make, and are good for you!
